It's worth every minute.

I have near had lamb. I think I would like to try it
Here in Hawaii most places sell lamb from New Zealand. It's very gamey. I prefer American lamb, it is alot less gamey and has a sweeter taste. I have one store that brings in lamb from Superior farms in Oregan. The quality is excellent.

I've been working my way through the freezer, to put to use whatever overflow/leftovers I have stashed there. I found some pulled pork I smoked off recently. I'll be using that with some poblanos, onions and garlic, crushed tomatoes, a bunch of Puya peppers, and hominy to make posole.
