That's probably a little too far away from the block to fully cook through. Try moving it closer to and exhaust manifold. It also helps to wrap it in foil - that way you can add a little olive oil and spices.

I would take that out of there and put it in the heater for about a month to age it.

That photo reminds me of a incident we had with a rack truck at work, back in 2010 or so.
We had a 2002 F-450 Rack truck for deliveries,it had a 7.3 turbo diesel with only 25,000 miles, and it had been parked for a month or so in the back, by the woods of our new shop. So we asked the office kid to start it up and let it run for a bit then take it to go get fuel for some shop equipment, as it had been sitting for a bit.
Well he pulls the truck around front and it was SMOKING heavy, and surging, sounding like crap!!!
Truck has always run great, so we go out to investigate, and turns out, a mouse or a family of mice had eaten or chomped threw the air filter plastic housing, and made a nest on the TOP side of the filter. So once the kid fired up that engine, the mice, or mouse was sucked into the air intake via the turbo.
It was a mess, the lowboy driver ended up doing the repair, and it was full of fur, and mouce/mice sludgie bits all in the inter cooler, and air intake. Some how it even required one new fuel injector.
