Depth of the pan has nothing to do with it. What you have is converter drain back which is normal. When the car sits the converter slowly drains back raising the level. The longer it sits the more it will drain back until it finds a happy level.

Your dipstick placement in relation to the tube sounds normal for a 727 and you will lose fluid from the trans when the tube is removed. Check the fluid level at idle with the trans in neutral.
