No problems cutting a auto console, but the carpet trim for the 4spd will cost ya.

As I recall the driver's side chrome finish strip is unique to the 4 speed console. This used to be a big deal hard to find piece, however today ALL is repoed if I remember correctly.

There are two console bodies available, one fiberglass and one of the original type material.
The console top plates for auto and 4 speed and the chrome, side lights and all are now available.
I think by the time you buy all of it you are into it for $1000. or more.

Yes that trim is repoped, but the only one I have seen is from a guy who was hand crafting them if I remember correctly. There may be a mass produced part by now, but I have not seen or heard of any.
By time you set up a complete repo 4 spd console, even if you have the body, you may want to look into investing that $ into a 5 speed. With a five speed you can use the auto console with no mods and would just need the ft top plate or cut a auto top plate, just a thought.
