68 Road Runner with 440 oil light coming on

I have a 68 Road Runner with newly rebuilt 440 that has no road miles but sat for about a year and a half before i started it again. Got her running and it idled rough at first then gradually got better. Blow some cat food out of the exhaust, apparently from mice. Yesterday I noticed after starting it the oil light was flickering on and off, and at times did more staying on. I have only ran this car maybe one hour total since overhaul by reputable mopar shop, which is now out of business after many years. I am wondering if my oil pressure switch didn't go bad. We pulled the wire and grounded it, and turn on the key and the light went out, so I believe the wiring is ok. We heard no noises and before the light was flickering had run the car probably 15 minutes, with no noises. Is there a chance my oil pump is plugged or something? Should I throw a switch on it and see if it stays out, or go right to a oil pressure test? If I go to the test, what should the pressure gauge show? Any suggestions?
 
first step is check with a mech gauge and depends on pump installed 40 to 60 psi cold
could be stuck relief on pump lifter popped out loose oil pick up or a cracked pickup
but after sitting that long stuck relief might be the easyest

After i check with a gauge, How can i check the relief valve? Do i just get a melling pump and change it out? How much priming the engine with oil is needed, and how? Thanks!
 
Pressure gauge showed 50 psi on cold start, so I am good to go. Replaced oil sending unit switch, and the light went out. Thanks for the advice.

Wow, not always gonna be so lucky. Congrats on the easy fix!
 
yeah, This engine has no road miles yet, so I was a little worried, but everything checked out ok.
