Does anyone know why there is light gray and dark gray center caps for rallye wheels? Which would be correct on 70 RR with silver rallye wheels?

It varies by vintage and application.... my dumb a** can't remember.
Someone here will chime in with the proper info tho, and in lieu, I think you can look them up at Year One and they will show proper application.

The best I remember, is the light argent is through 1970, the dark argent is 1971. In 1972 the rally center caps changed completely.

Rallye wheels didn’t show up until 1970, and for the 70 model year only they used the light argent cap. 71 saw dark argent, and the acorn style cap came about in 72-74

Although I knew the light cap was "correct" for my 70 Roadrunner, I am doing and have done a number of things that I prefer, and I chose to switch to the dark caps when I installed the 17" aluminum Rallye wheels.

I have always liked the dark center on a ralley with the polished ring , no matter what year the car or truck.
