Does anybody know what the combustion chamber size of a stock late 70's 360 Cylinder head is?

Mopar is not known for accuracy with their claims of combustion chamber size. Best bet is to measure your own parts.
If you are trying to predict a compression ratio, calculate it with whatever the published spec is....then calculate again, adding 3-5 cc.
 
20 or so years ago I had some untouched 051 heads that were about 70-71cc.

Best to measure what you have if you really want to know.

Performance aftermarket valves often are less “tuliped” than the factory valves, which will make the chambers a little smaller.
