Here's an update on my progress
This was the first time I have ever installed a drivetrain like this. I bolted the engine, trans, and K-frame together and slid it under the car. It worked very well - and I'd suggest doing it like this again in the future. No issues with header clearance or anything!
Oh, and must add that I did this all by myself.

The whole drivetrain bolted together.

I used my engine hoist to lift the car up using a tow strap.

If you do this, be sure to block the rear of the car up under the differential so the car can pivot on the stands.

Lowered the car right over the entire drivetrain with no clearance issues.

It's installed!! Just a few wires to connect, fuel lines, a radiator and it's ready to run.

I was so close to getting the whole thing running... just a little impatient... and forgot to hook up the starter wires. When I turned on the battery, the main power wire grounded on the starter causing the positive wire to burn instantly. I had it on for maybe 3 seconds... oops

Here's the damage. Though it looks bad, it was only the positive wire running down to the starter.
