What is the best and tried way to remove the old woodgrain insert off of a console plate without ruining the plate?

If it is brittle, soak it. Warm water in the tub will do to soften it up. Hotter the better.
Then goo-gone or something like that to get the residue off.
It should be just the brushed aluminum plate under the woodgrain which sits over the ribs like on the 66-7 Chargers.

Yep, a hot bath worked pretty good to get the top layer off (and a putty knife and some elbow grease). A follow up with acetone got all the sticky residue off. Pure metal now and it shines! Thanks!
