Fran remembered a discussion from several years ago & offered to send me some of his homemade relish which I accepted and received today.
I tasted it and it is fantastic. Now I need to procure some dogs worthy of slathering this stuff on.

If anyone wants to try their hand. I let mine age in the jar a month before using. Jar it in clean jars and lids as soon as its cooked and put lids right away! have oven gloves to hold jars when putting on lids. A grinder like these is nice, note triangular openings.
