What Carb for this 318 Build?

I know this may be a bit of a vague question that can solicit all kinds of responses. I am not a professional engine builder by any means, this is a hobby build and I am learning as I go. One place I am falling short is carburation, so I figure why not ask the Mopar masses.

I have outlined my basic engine build below. I have had vastly differing opinions on the carburetor I should be using, so I'm looking to compare results and learn a little. I can try to add any additional information to the best of my ability.

Mostly street & highway driving.

Since you say mostly street I will assume automatic transmission and highway friendly gears. With those assumptions, a 600 vacuum secondary Holley will work well.

Yes, it is an automatic. It currently has a 323 gear, sporting a stuffed in pair of 255/60/15x8 tires.
