Try soaking in milk overnight, then stuff with your favorite recipe but add apple and onion heavily roast till done. The apple and onion absorb the wild/gamy taste. I use this method on pheasant works great. You can also brine with the apple and onion mixture but you need to run it through a food processor to get maximum surface exposure for increased absorption rate, add 50% to recommended brining time.
