What should I do with the dash?

And, PLEASE replace that musty smelly insulation pad on the inside of the firewall! Make a stand for your dash for easy re-assembly
too. Wiring will be so much easier.

Smelly insulation has been removed.
 
I removed my dash and stripped it down then blasted it. Epoxy primed and used suade finish paint sourced from Kolor Korrect. An excellent match to factory. Mine is the same color as yours.

I don’t remember the cost. I got one pint Chestnut Suede Finish. And had plenty to do the dash. Phone number on the can: 732-846-1044. Kolor Korrect.
 
I just found my receipt from Kolor Korrect. 1 pint Chestnut Suede Finish $200. This was August 2020. Spendy but a very nice match. I was looking for a very close match to factory, and think it is very correct.
 
My dash (65 Belvedere) had suede finish on top and standard gloss finish on the face. The dividing line was where the vertical face meets the top where it rolls over - about 1/8” above the glove box.
When I refinished it, I bought KolorKorrect suede and gloss, in rattle can. IIRC the rattle cans were ~$70 each.
