Having owned these cars and currently restoring one, my best advice would be to buy the very best car you can afford. The chrome and aluminum trim is all unique to the car, the interior, glass,dash, lenses, everything is specific and much of it is hard to come by and expensive for quality parts...

If you still want to keep rpm down on the highway you could stay with the 2.94 and step the converter up to a 2200-2400 stall 11 inch converter. This would give you a better response out of the hole and not hurt you top end wise. Going to that converter and a 3.23 will make an even bigger change...

I agree on the 15 inch rims. You can purchase front spring hangers from a variety of sources that will lower the rear of the car without affecting spring rate, this will help you get the stance you are after.
