These guys are local to me and I love their videos. For anyone that's ever had to manually remove decades worth of grease, paint, and undercoating during a restoration - this will be extra satisfying for you.
Not sure I would go that route. I would be afraid of left over residue coming back. The last 2 car I did were blasted. but not the hood,doors,or roof ect.
But now if you could dip it in etching primer .... that would be the trick.Yeah... too many nooks and crannies. Neat, but down the road can be a problem ; talk to guys who have restored old race cars [especially TransAm cars] in the last 30 years.

How do you know the dip/strip and EDP shops are competent? How long have they been in business? How much longer will they be in business?
Guarantee for the dip & strip work?
Guarantee for the EDP work?
Transportation costs to-and-from the dip/strip and EDP shops? Another $2,000 to $4,000?
I suppose it's "worth it" for a rare and significant/desirable car...a valuable car.
Overall, how much more paint & body "jail time" does all of this add to a restoration?
