what size sheetmetal screws do I need for my 74 RRs
headlights, headlight bezel, grille, light rings, turn signals, etc.?

I'm thinking I can get by with a lot of #8x3/4,
but thats just a guess

A majority were #8's. But a stash of #6 and #10's should keep you from making too many extra trips to the hardware store. A dab of Anti-Seize on the headlight retainer ring screws will save you grief in the future. I think those are #6's.

That's a good point, your bound to come across at least a few holes that will be flogged out and require a larger diameter screw.
