Hood spring good or not? How to adjust?

You possibly have the wrong catch if the latch is all the way down. Or the latch is too far down and not fully closing.

ill try messing with the latch some more. i can see from underneath (no bumper on yet) that the latch is engaged.

would tilting the hinges down in the front help it ?

The latch is a 2 step latch like the doors, you may be too far and only catching the first latch, it should hold the hood tight on the rubber bumpers, that’s where you fine tune the level with the fenders
Or you can add some hood pins like the super B’s have, I kinda like the look of them
