How overfilled before problems on 727 and how best to drain a bit?

Remove the cooler line that comes from the forward location at the trans. Place a container and let it set. It'll drain a pint just setting without running the engine.

Either the cooler line or.... Remove the neutral safety switch....

Cooler line is the way to go if you must, no worries as that pressure is lower than line pressure, and is a fantastic way to change your fluid.
