I have some 452 heads (1975). I built the 440 in 1983 for a Challenger but never on the road. Put it in my 64 race car in 93 and raced it 8 years very sparingly. Been on engine stand since 2001, opened it up and still very clean inside, will change out oil pan to fit the 65 street car. My question, should I change out the valves being this long of time but very few miles?
I have NOS mopar valves I can use.
 
Are you referring to valves or valve springs?
Valves snapping heads off, had a couple that broke sitting on shelf. Maybe they had cracks and just finally let go?
They’re all welded on anyway from the start
 
The moisture in the air can react with the carbon deposits on the valves and corrode them badly.

At a minimum I would disassemble the heads and wire wheel the valves, and inspect them for any significant pitting.
They’re often/usually pitted worse on the top(bowl side) of the valve.

I just freshened a set of bbc Merlin heads from a crate engine……. The tops of the exhaust valves looked like the surface of the moon.
The chamber side were fine.
They got replaced.

Of course, if you have new valves on hand, swapping them out would be good insurance.

If you have them, why not, and not take a chance. Personally I've not seen one broken off. I would be more worried about the springs sitting in one place for years. As @PRHeads said, disassemble and check everything.
