Since you're considering an Edelbrock (aka Eddy), which is a copy of the origional Carter (AFB or AVS depending on model), possessing the same "tuning ability" as the origional Carter, why not use an origional carb. Retrofitting involves cobbling up the fuel line and fittings (don't use hoses and gear clamps), getting the choke to work (either an electric design or manual), adapting the throttle linkage and getting the air cleaner yo fit. An origional Carter carb is not any more difficult to tune than Holley or Quickfuel (which resembles a Holley model 4150 or 4160 depending on capacity). Both Holley and Quickfuel designs require torally different tuning techniques and parts and knowledge. There is no "panacea" that makes one brand better than the other......in spite of what you've been told or read. 95% of the "out of the box" carbs will need "tuned" to your specific installation.
