Its a crap shoot. Believe most of the original were 10 spline and the aftermarket were typically 29 spline in my experience. But you need to check to know for sure.

I checked the data logger on the race car. I only have 3 real runs on this motor so far. Max oil pressure never exceeded 72 psi and that was at 7800 rpm.
Old rule of thumb is 10 psi per 1000 rpm. 55 psi at 5500 rpm is fine.
I need to look at the last runs, but pretty sure that my 1060hp drag motor built by Tony Bischoff (about as good as they come engine builder) never gets past 70 psi even close to 8000 rpm. Tony says that is good.
No - I do not use high volume pumps unless the flow is too low. Having to bypass the additional oil is detrimental, especially if you don't need it. Don Scinto convinced me of that back in the 80's.
I missed the hyd roller part.
Bad things can happen on big block mopars with hyd rollers. DAMHIK. What I learned is that they are very heavy and do not like rpm! I ran into trouble with mine at 6000 rpm (it was still pulling like crazy at 6000 rpm). My valve train went crazy around 6000 rpm...
Are you talking flexplate to crank? For those, I am pretty sure I use ARP 200-2903. They are 0.500" long. For the flexplate to converter, sometimes I used the same but in the converters I have now I used 200-2902 which is 0.680" long. But I recently added spacers for better pump engagement...
