The red car looks right and when it squats a bit the wheel moves back a touch which centers it in the wheel well and the tire won't get into the wheel lip at the back.
I think it looks a bit strange as well. If the springs flatten out some when you throw some weight in it the axle will shift back a bit more as well. So you'll have to watch clearance to the fenderlip.
That pulley looks huge too. Hopefully the pulley will be okay when using the car bracket setup. Not sure the car brackets will work with that pump either. Too bad there aren't junkyards with these old cars in them anymore.

I've never abandoned a project car and I always give myself one year max to complete them. Nothing pains me more than seeing a Mopar get ripped apart and then sit for 10 or 20 years while parts get lost and damaged.
