Is this normal for the U joint on my 67 Charger? I’ve never seen a bolt for u joints like this. It’s a 383 with a 727.

Yep.
It’s definitely a bolt head. Maybe someone put a small bolt in place of the zerk.
It's a plug.
Shouldn’t there be a c clip holding the caps in?

That is a "Needle" grease zerk. The needle presses in on the center of the zerk to unseat the spring-loaded ball to insert the grease.
Now that looks more like it. I will have to now see if there is a hole in the middle. It could just be filled in with crap now. Am I better off just using a regular zerk fitting for it? I'm seeing U joints that have the grease fitting in the center of the joint, wouldn't that be better to use? The one shown in the picture looks like it will grease just the one cap.

The U-joint cross is "Cross Drilled" so only one cap (or the center of the cross) needs a zerk to lube all four caps and needles.
Thanks, sounds like I might be good. Probably going to need some grease though. Its been sitting for god only knows how long.

Might be worth taking it apart before to inspect it. Pop the driveshaft and pull one cup. I have seen sometimes the grease in stuff that sits and goes through heat/cold cycles literally turn hard so when you try and grease it, it doesn't grease it but send thick hard sludge where you think will be fresh grease..
Back in the old days of my former line mechanic occupation, the older mechanic next to my stall sold his older customers on repacking their u-joints. Extra labor-no parts charge. He had the salesman tongue.

I'd pull it loose and take those 2 caps off and see if the cross is good, and if it is grease her up and move on. If the cross is worn from the needle bearings then I would change them both (u joints) and move on.
Just look at your picture, you can clearly see the spring loaded ball in the center of the fitting. Just get a needle point grease gun tip and grease it. Look at the front joint, might be a fitting there to.
