What's the best way to jack the motor up right now all I have access to is car ramps and a floor jack Kinda don't think I want to jacket up on the oil pan or harmonic balancer?
 
A cherry picker is about the only thing left! You could use a 2x6 wide enough to cover the bottom of the pan and then use the floor jack to lift it up enough to get the mounts out1 The 2x6 spreads the pressure across the bottom of the pan you can only lift the engine maybe an 1.5" any way.
 
Do you have/can get a bottle jack ? You can lift on the back of the block past the oil pan on each side, enough to do one mount at a time.
