So there is some confusion, the test flight will be in an elliptical orbit around the sun that will go out to the same distance as Mars orbits, it is not going to Mars, however, the test flight is the first step in potentially using it to launch stuff for an actual Mars mission.
The Space X site you posted states that Falcon Heavy is the most powerful "operational" rocket, so most likely that is why Saturn V isn't mentioned.
