Gopher turtle stew is the best down here in the south but we can't harvest them these days.



Gopher tortoise stew is a traditional regional dish, once known as "Hoover chicken," but today, gopher tortoises are a protected species and it is illegal to hunt, harm, or possess them in most areas. The practice has largely been replaced with substitute meats such as alligator, pork, or other legal species of turtle.


The Dish and Its History

Gopher tortoise stew has deep historical roots in the southeastern United States, particularly among Minorcan settlers and Native American tribes in Florida, and Depression-era families who lived off the land. The meat was considered a staple and was praised for having a mix of flavors, sometimes described as a blend of chicken, fish, pork, beef, and "mule".


Legal Status and Conservation

Due to habitat destruction and human exploitation, the gopher tortoise is now a state-threatened species in Florida and a candidate for federal listing under the Endangered Species Act. Conservation laws make it illegal to disturb their burrows or harm them.
