I'm about to add A/C. Wondering approximately how long this should take. One shop quoted $1400 for kit and 2160 (24 hours) for installation for a total of $3700. Yet I've heard from Vintage and also other sources to budget about $2500.

Is 24 hours too long indicating I need to look for another shop?
 
Agreed. 24 sounds high. Classic Auto Air Tampa is a worthy competitor.
 
When I do one in my shop I charge 20 hours labor
