I decide to open this tread with an image of the dish my wife made me two weeks ago, we invite some friends over to eat of course, the name of this dish is paella valenciana, those who have been in Spain most likely eat this at some point in your travel , is made with rice. Shrimp, pork, chicken, tomatoes, onions, garlic, if you like lobster, rosemary and a lot more stuff, this idea came to my mind, why not a tread of the dishes that your wife made to you and you really like it, anything goes guys.

Momma makes a Fettuccine Alfredo with Diced Mesquite Chicken Breast, Pepperoni & Cheese thats amazing....

I don't have a wife of course but everyone who tries this loves it. Fast, easy and never any leftovers, it's my

Tater Tot Casserole

1 to 1 1/2 lbs. browned ground beef
2 cans of Cream of Chicken soup (or 1 Cream of Chicken and 1 Cream of Mushroom)
Half a bag of frozen tater tots
Shredded sharp cheddar cheese

Drain the beef and put it in a casserole dish. Stir in the "raw" cans of soup and a big handful of shredded cheddar; mix well. Cover the entire top with a single layer of frozen tater tots (Recommended: you can get more on there if you place them in a circular fashion around the dish instead of just tossing them in there) and then cover it with more shredded cheddar. Bake at 350 degrees for 25 minutes or until the tots are lightly browned.

It rocks!

Wow! Used to make that similar recipe in the early 80`s when we had the boys in sports.
I used golden mushroom soup, otherwise it is the same.

Generally wife and I cook together if we are doing something great. East Indian, usually. Mexican, but I prefer to eat my Mexican food in Mexico, surrounded by Mexicans. But I digress...
We have several antique Indian cookbooks. They have the coolest recipes. She does this thing with chickpeas that is great, and one with spinach that can eat your face off if you aren’t careful.
This is perhaps our favourite so far. It’s our take on a local Chinese restaurant’s version of ginger beef. We use

deer, it works better then beef.
Hopefully you can read this poor copy of my cooking oil stained original copy. If you can’t read it PM me and I will send a better copy.

My wife makes several dishes that have already been mentioned, but one that's not is Thanksgiving turkey with all the great side dishes. She always intentionally makes way too much because everyone wants to bring home leftovers. Christmas is always a giant Italian feast with the same requests for leftovers.

I love Paella, and I have had a traditional one prepared in Madrid (Spain) ...it was an excellent night out. The following night I don't remember too much....after staggering down some stairs ....watching a blind guy outside the bar walk into a scaffold (canes only detect objects on the ground) ....doing my best not to puke in the taxi with all the Johnnie Walker Red label I had swallowed that evening.....I do remember giving directions to the cabbie in my very best 'pigeon-Spanish' ...."Hotello ovo topo hillo....." boy did I get a glare for that. :D
Ahhhh...... @eldubb440 - me likey that low hanging fruit.

My wife is Sicilian - don't call her Italian - and every Sunday morning the house is filled with the wonderful aroma of garlic, onions, sausage and meatballs sauteing in virgin olive oil. Then comes the fresh tomatoes, tomato paste and everything else that makes her sauce so special. Just don't ask her to make pancakes. Not in her DNA.
She's also half Polish so we have to listen to 3 hours of Polka music on the local radio station. But that makes her happy, so I'm fine with it.
