One thing about my gig (well, when I had a gig, anyways) was that I had access to all parts
of buildings - including the kitchens of restaurants.
As a general rule, Chinese restaurants have the nastiest kitchens I've ever seen.
Seriously, it ruins you for ever eating in one of their businesses...

On the other hand, I cook the stuff myself a lot at home and I did learn how to do some of
it from watching them do it, too - and fortunately, you don't have to get any ingredients from
any of their sources.
The nastiest place I ever worked was a Red Lobster. We were installing a new outside cooler well, I just supplied it with power. But anyhow that kitchen was nasty and smelled really bad. There was another place I went to I had to trace out a conduit to see where it went. It went into a restaurants storage room I opened the door and they had mice crawling all over the cases of mushrooms and potatoes and what ever else they had in that room. Seeing some of these operations from the other side of the counter will fix you from eating at a bunch of places....

Not just restaurants. I used to service national food store chains that had plenty of rodents and roaches. I had to run conduit below the main floor of a store that had a 4 foot crawl space covered in sand and fleas. Getting bit hunched over while drilling concrete to fasten conduit straps was a treat. The roaches seem to like the bakery part of the store the most.

Chinese food here is not authentic. My wife had to go to a Chinese community police function that served authentic Chinese cuisine. She is usually very open minded with a wide range of cultural foods but said it was the most disgusting food she had ever seen or tasted.
 
I got take out from my local Chinese place the other day. They've been open for 35 years and I've been eating there since I was 12. My girlfriend is actually the only server that works there now. She says their kitchen is super clean. Of course, they're pretty well americanized, like CNCguy said. Right now they're only doing delivery and curbside pickup because of the quarantine stuff, but the owner still has my girlfriend in there getting hours and making tips running food out to cars. Good people.

If you see enough commercial kitchens you start to realize that problem is not exclusively Chinese. To be more clear, the beauty of a Chinese restaurant is that they heat everything to like 800 degrees lol for a few seconds in that damn Wok which goes far in killing off the nasties and keeping the health department away. I really think you'd see a stronger problem in Italian joints (non pizza) where theres a lot of salads and potentially undercooked foods. And don't take what i'm saying to be racist in any way....... anyone of any nationality can run a restaurant of any kind.... it takes people who care to do it properly.
 
My old company we did Deli renovations for Kroger and some of those rotisseries where they have 10 or so whole chickens in them are the worst to deal with. Worked at one in Decatur Al this was the most disgusting thing I ever saw. I was supposed to relocate the power so they could relocate the rotisserie and it was literally stuck to the floor in 3 inches of chicken fat and grease. That Kroger deli was shut down when I called for my hood inspection.. The inspector found a red tag on the hood dating back to 1987. They had been cooking in that deli since 1987 on a never passed hood installation. The inspector told the ladies in there they were to stop cooking immediately.
 
Not after watching that video of the Wuhan market. I used to laugh about the "mystery meat" at Chinese restaurants. Not any more.

I made no statement to the effect that what I've witnessed over the decades was exclusively a Chinese restaurant issue.
It's not - but in my experience the majority of it was, generally speaking.
That said, I'm thankful that our own local Chinese restaurant is about the only one I DO eat in; they do a good job.

I've seen some dreadful stuff in big name national chain stores as well as little mom and pops of most every style cuisine.
I've had rats running over my feet while atop walk-in freezers in the kitchen of a 100+ location regional grocery chain;
I've been attacked by yellow jackets inside the store (where the customers are) of a huge international gas station franchise.
I've surprised employees in the kitchen of one nationally recognized Chinese cuisine location (late in the evening) when
the animal they were in the process of cutting up was obviously not on the menu, instead very much resembling
someones' pet (not kidding!); they said it was for the owner, not the public. :eek:

I have a Chinese restaurant that has an enzyme drip for the sink/grease trap. I am in there every 4 months. Floor, walls, bathroom all so disgusting I waited till I left to find a Wawa to use the mens room. All types of flesh on a stick on the counter, floor, draining board, etc. All at room temp. Screen door in the kitchen open, flies are having a feast. No Chinese for me.
 
Some Casino kitchens ain’t much better. A buddy was a Bacon chef, yup that’s all he did was fry bacon on big pans in an oven. Imagine the grease in 55 gallon drums covered in roaches. Yup it happened.
 
You ever wonder why they squat so much. ? So that crap settles at the bottom so it dumps easier.
 
If I do, I'm makin it myself! And still no Rat meat Taco's from Taco Hell!
 
If you do eat chinese food, careful with the rice dishes. Leftover cooked rice is only good for a couple days after cooking. Many chinese restaurants cook too much rice and do not refrigerate it properly or quickly enough and it will make you feel sick.
 
Q. Why do you never see Chinese kids playing baseball?

Now I would prefer anything Italian but I will eat lots of different stuff (no fish or bat)
But as long as it's cooked you got to do what you got to do !
Now if there's normal food you don't eat dang bats or other rats or .....

You know the new York rats are huge they would feed alot of people!

When food gets scarcer im taking the 308 to the zoo ! I'll get something tasty there !
