Kits that include bushings are because there are no oversized pins available for most cars and the bushings are cheap and accept industry standard sized pins. The down side is that they are soft and require a much larger hole than needed to be drilled in the hinge body to accept the bushings...

The plastic connectors and wire insulation is 50 years old and plastics get brittle with age. As for taking the dash apart, get a Factory Service Manual. It is much easier than you think. They assembled these cars very quickly as sub assemblies, the take down procedure is just the reverse.

The installer will know to attach the button clips to the listing wires. That is what pros do. If you have more questions on the seat covers I would contact Legendary and talk to their tech dept or the shop installing the covers. You bought excellent quality covers so I wouldn't worry.
