440 through manifolds, 2.5" or 3.0" exhaust?

One consideration is how the exhaust is bent. I think a 2-1/2" mandrel bent system would flow as well or better than a 3" clamp bent system.
On the Charger I went from a 3-1/2" exhaust shop bent exhaust with race bullet mufflers exiting under the car before the axle to the 3" TTI mandrel bent full exhaust system with the super turbo mufflers and I didn't notice any loss in performance at the track, but the car is much quieter.

All I can say is you're not living up to your screename.
I'm getting older... The screen name is the license plate on my green vert... When I got the plate it was on my lime green R/T SE U code Challenger... Big nasty cam, dropped in the weeds Centerline Champ 500's.. That car was pretty wild when I first built it... Since that's what I had in mind as a twenty something... But since I'm the guy that even in my late 20's I drove that car everywhere after I got it on the road I started making it somewhat mild... Smaller cam, raised the car 1.5"...

Since it's not a race car, I would install what you have and save a few pennies. Git 'er done. The 3 inch pipes are not going to kill off street performance. As far as how looks and fits.... that is a matter of the quality of installation, not +1/2 inch pipe size.
