The car had a new clutch in it before I bought it.

The car shifts nice and engages good. however, the pedal is super hard and it is difficult to feather it into gear.

Any suggestions?

Can you tell us what type of pressure plate i.e. long, diaphram or B+B.

Has your over-center spring been removed from the pedal? It should be with a diaphram.

I just checked and the clutch pedal has no spring.

Looking through the previous owner's paper work I see that he first installed a dual friction clutch by centerforce.

Then it appears that the current clutch is a centerforce 2

The clutch seems to be working fine. The pedal is just very hard. If my foot is even a little damp I have to push so hard that sometimes my foot slips off the clutch pedal.

I was thinking of putting a spike clamp on the pedal so my foot won't slip off.

You can disconnect the adjuster rod from the fork and verify the rest of the linkage is working smoothly without binding (at least up to the release fork anyway). If all is well with the linkage then you probably have some crazy spring rate in the P plate and it's a matter of time before you start replacing linkage parts due to excessive wear.
