What heads to use

You said your quench distance is .035? If so... Run it.

If it sticks above the gasket, it will slam into the cylinder head.

Most dome pistons are proportioned to what ever brand of heads you have. Eg. Edelbrock performer RPM in order to fit the combustion chambers. You can put plumbers puddy into the combustion chamber of one cylinder and bolt that head on with gasket and gently turn engine through cycle, remove head and measure puddy You will need to look up the desired clearance or inquire at engine shop. Likely .200" or more ? Making sure Pistons have room to expand.
