Ok found on-line the purpose for the rubber bands/o-rings = anti rattle. But what are those flat washers for? I was thinking maybe put under the bolt, but the bolt has a nice big flange. So I'm at a loss here. No idea. Any thoughts?

The flat copper washers are actually gaskets. They go between the flexible brake hose (metal end) and the caliper.
 
I was wondering that but why so many? One on top and one on the bottom?

I used gasketed washers on the brake hose's to calipers. I made sure there was no debris on the washer mating surface on the caliper, but I had problems with leaks. I switched to the gasketed washers, problem solved. No, I did not Gorilla tighten the banjo bolt to the caliper.
 
I guess I knew that, but like I said I had so many of them. I think I have around 8 of them all together. Someone must of lost count along the line.

Spares?

They are supposed to be single, one time use.

...but I have reused them after a careful exam and sometimes a light sanding.

...in an emergency.
